Say it's a factory... they may remodel one department, having those workers work in other departments for that time period, being paid their same rates, then they rotate. If its an office building, and they do it one office at a time, they may just tell the worker for each office at a time to take a day of vacation pay, and that's usually all the time it takes for one office. But yeah, for a big factory style work environment, the business usually won't want to halt production like that and waste money on everyone's vacation pay at the same time.
